Recipe - White Chocolate Biscotti




2 cups all-purpose flour

¾ sugar

¼ teaspoon salt

½ teaspoon vanilla

3 tablespoons milk or cream ( as needed)

1 ½ teaspoon baking powder

½ cup unsalted butter, room temperature

2 large eggs

12 ounces white chocolate

¾ cup macadamia nuts


Preheat oven to 325°, line a heavy large baking sheet with parchment paper. Whisk the flour and baking powder in a medium bowl to blend. Using an electric mixer, beat the sugar, butter, vanilla and salt in a large bowl to blend. Beat in the eggs 1 at a time. Add the flour mixture and beat just until blended. Using food processer, mix white chocolate and macadamia nuts down to small bits, then add the white chocolate and macadamia nuts into the dough mixture. If the dough is too crumbly add milk or cream a little at a time until it holds together.

Form the dough into a rectangle or block. Bake for 30 minutes or until golden brown.  Place the Biscotti on the cutting board and let cool for 30 minutes. Using a sharp serrated knife, cutting on a diagonal, cut cookie into ½ to ¾ inch- thick slices. Arrange the biscotti, cut side down, back on the baking sheet. Re-bake for 15 minutes. Drizzle with melted chocolate if desired.
