Recipe - Vegetable Chicken Wrap

Ingredients

4-6 large romaine lettuce leaves

4 tablespoons fresh corn

2 tablespoons grated carrots

1 ½ cups of black beans

¼ cup cilantro, chopped

⅓ cup of your favorite onion dressing

1 cup grilled chicken, bite size

2 tablespoons white cheddar cheese

4 cherry tomatoes cut in half

½ cup sliced black olives

2 tablespoons diced red onion

 

Directions

In large bowl add, chicken, corn, cheese, carrots, tomatoes, black beans, black olives, cilantro and red onion. Mix well then add dressing and stir.

Place 4 heaping tablespoons of chicken and vegetable mixture in each separate leaf. Wrap like you would a burrito, hold together with tooth pick and place on individual serving dish.

Serve with chips and salsa.
