Recipe - Stuffed Avocado
1 avocado, halved, pitted and score
¼ cup diced red bell pepper
¼ cup cilantro leaves, roughly chopped
1 (5 oz) can white tuna, drained
1 tablespoon lime juice
2 teaspoon lemon juice
Take avocado, halve, remove pit and score in even slices. Pour 1 teaspoon of lemon juice over each half so it will soak down to the bottom.
Place drained tune in a medium size bowl and chop it up with the edge of spoon. Add bell pepper, cilantro and lime juice. Stir it all together until everything is well mixed
Scoop the tuna evenly into the avocado halves.
