Recipe - Squash Casserole

Ingredients

2 cups of cooked zucchini and yellow squash

1 small can evaporated milk

½ teaspoon pepper

1 teaspoon salt or to taste

¾ stick melted butter

2 eggs, beaten

½ cup chopped purple onions

½ cup grated or shredded cheese

2 cups of cracker crumbs

vegetable oil or olive oil

Directions

  1. With a mixer, mash and mix until chunky, cooked zucchini and yellow squash.
  2. Add evaporated milk, and mix with mixer.
  3. Add salt, pepper, melted butter, eggs, and onions and mix together with a spoon.
  4. Add cheese and cracker crumbs and mix with a spoon.
  5. Coat the bottom of a baking dish with oil and pour in the squash mixture.
  6. Bake at 350° for 40 minutes.
  7. Serve and enjoy!
