Recipe - Salt & Vinegar Popcorn




3 tablespoons

1 spray bottle

salt and peeper to taste

¼ cup extra virgin olive oil

 ½ cup seasoned rice vinegar

reduced-fat Parmesan cheese, grated (optional)


Place 3 tablespoons of popcorn kernels in a brown paper sack. Place popcorn kernels in bottom of brown paper sack, fold top over securely and microwave on high for approximately 1 minute, 20 seconds. Microwaves vary, so be careful not to over pop and burn popcorn. Pour extra virgin olive oil and seasoned rice vinegar into spray bottle and shake well. Make sure to shake spray bottle each timed before spraying popcorn. Place popcorn in individual bowls and spray with vinegar and oil. Then top with salt, pepper and Parmesan cheese.

(2 tablespoons of unpopped kernels yields 3-4 cups of popcorn which comes in at just under 100 calories for a super filling snack).
