Recipe - Pork Tenderloin with Roasted Potatoes




1  medium size boneless pork tenderloin

2 tablespoons oil

Compound butter ingredients:

1 stick unsalted butter, softened

1 tablespoon each: thyme, rosemary, parsley

salt & pepper to taste



2 cloves garlic, crushed


1 pound medium red skin potatoes quartered and seasoned with salt and pepper to taste and place in roasting pan.


Compound Butter:
In small bowl mix with fork, butter, thyme, rosemary, parsley and garlic, set aside

On a hot grill, sear meat that has been well seasoned with salt and pepper until you get a great even color to meat. When the one side looks even colored with sear marks, flip it over to sear other side.  Brush compound butter on both sides of seared meat and place meat on top of the potatoes. Place all ingredients in preheat 375° oven, basting with remaining butter and stirring potatoes often. Cook until internal temperature reaches 135°   Let meat rest for 5 minutes then slice on the bias.
