Recipe - Mushroom Pasta
One box cooked whole wheat penne pasta
16 to 24 oz baby bella mushrooms, washed and sliced
a handful sun-dried tomatoes (dry) (about 1/4 to 1/2 cup)
several cloves garlic (1 to 2 tbsp minced)
olive oil (approx. 2 to 3 tbsp)
In a large skillet heat oil and garlic on medium heat. Add mushrooms and sauté until tender.
Before the mushrooms are done (some liquid should have formed), add in slices/pieces of sun-dried tomato for the last few minutes of cooking.
Add to cooked pasta and season with salt and pepper to taste.
Customize with other spices like cayenne pepper or your favorite pasta sauce!
