Recipe - Herb Garlic Potatoes




6 medium potatoes

2 tab. butter, melted

Sprig of thyme

2 cloves of garlic

 ¼ cup olive oil

1 lemon

Salt to taste

Parsley for garnish


Clean potatoes and pat dry, cut vertical slices in the potatoes, ⅛ to ¼” wide. Make the slices deep enough but don’t cut all the way through the potato. Place potatoes in a large baking dish. Mix the oil and butter together and slowly pour over potatoes. Slice lemon and garlic and place over tops of potatoes. Pull thyme off sprig, and then sprinkle potatoes with the thyme and salt. Cook in preheated oven 350° for 50 minutes or until tender.

Garnish with parsley
