Recipe - Hashbrown Muffins

Ingredients

1 cup hash browns (fresh or frozen)

4 large eggs

2 cups of milk (or cream if you prefer)

¼ cup red onion - chopped

¼ cup red or green pepper- chopped

1 cup shredded ham

1 cup shredded cheddar cheese

Parsley for garnish

Sprig of dill

Salt to taste

 

Directions

Preheat oven to 350°
Divided hash browns and push them to the bottom of each muffin cup.
Bake hash browns 25-30 minutes.
Beat Eggs, milk and salt.
Place Red Onions, Dill, and Red Peppers into each muffin cup on top of hash browns
Add shredded ham to each cup
Pour Egg & Milk mixture halfway into each cup of the muffin cup.
Top with shredded cheese.
Sprinkle parsley on top for garnish
Bake for about 10-15 minutes.
