Recipe - Egg Strata




8 eggs

1 shallot, sliced

1 tsp fresh thyme

2 cups bread of your choice

½ cup heavy cream

1 cup shredded cheddar cheese

2 tbs butter and 1 tbs olive oil

1 clove garlic

1 tsp fresh parsley

2 cups spinach

4 oz goat cheese, cubed

salt & pepper to taste


Preheat oven to 375°

Heat frying pan to medium heat, add butter and when it starts to sizzle, add shallots, sauté until caramelized. Add spinach to frying pan stirring until it is lightly wilted. Turn fire off; add garlic, thyme, and parsley in spinach and shallots stirring lightly until well combined.

In separate bowl whisk together eggs, salt and pepper. Add heavy cream and whisk again. Add spinach mixture from frying pan to egg mixture in bowl; stir with spoon. When combined add bread crumbs, ½ the cheddar cheese, and goat cheese, stirring again.

Coat frying pan with oil; when frying pan is hot, pour egg and spinach mixture into frying pan stirring as little as possible. Cook it fast, until it all comes together and thickens. Once it thickens pour into a separate lightly buttered pan or oven safe dish and finish cooking for 5-10 minutes.
Remove from oven; sprinkle Egg Strata with remaining cheddar cheese.
