Recipe - Crepes With Cream Cheese Filling and Fresh Berries




1 pint strawberries, hulled and sliced

1 cup all-purpose flour

1 cup milk

¼ teaspoon vanilla


Cream Cheese Filling:

1 package cream cheese, softened 

¼ cup powdered sugar

1 pint blackberries, halved

 ½ teaspoon salt

 1 large egg

2 teaspoons melted butter & extra for frying pan



½ cup butter ( 1 stick)- softened

1 teaspoon vanilla


For Filling:
Mix together cream cheese, butter, and powder sugar until smooth. Fold in vanilla

In large bowl beat egg, milk and vanilla. Whisk in dry ingredients and fold in 2 teaspoons of melted butter
Heat an 8 inch nonstick frying pan on medium heat and lightly coat with the extra butter. Ladle a thin layer of batter into pan and swirl pan to evenly coat. When batter is set, flip and cook other side for about 1 minute. Remove, place on plate and lightly spread with cream cheese filling. Top with berries and fold close. Garnish with more fresh berries and a dusting of powder sugar
