Recipe - Bean Burritos

Ingredients

 ½ box of Velveeta

½ teaspoon cumin ( divided)

1 medium jalapeno pepper, chopped

½ cup grated cheese

1 package of burrito seasoning mix

Olive Oil to cook shells

½ cup milk

1 cup enchilada sauce

1 medium onion, chopped

1 can refried beans

4 burrito shells

 

Directions

In large microwave safe bowl add Velveeta cheese, cut into cubes, 1/4 teaspoon of cumin, milk, enchilada sauce and ½ of the chopped jalapeno. Cook in microwave 6-7 minutes. Stir half way through and keep your eye on it so it doesn’t burn.

Filling:  Stir together beans, the remaining ¼ teaspoon of cumin, and 1 heaping tablespoon of the burrito seasoning mix. Add a little water if too thick.

In frying pan pour a little oil in bottom of pan, fry each tortilla shell one at a time until they just start to brown. They still need to be soft. Lay each on paper towel, so that it will soak up some of the oil.

Add 2 tablespoons of bean mixture, 1 teaspoon chopped onion, and ¼ cup grated cheese to each fried burrito shell, fold ends , then roll up burrito. Place burritos into an oven safe pan; pour Velveeta cheese mixture over the 4 burritos.

Cook in preheated 325° oven 20 minutes or until bubbly.
